Upcoming Changes and New Mushroom Strains

One of the best things about being a mushroom grower is the constant experimentation that I get to do. There are so many varieties of mushrooms, and each of them is just a little different. For example, oyster mushroom species are similar in many ways, yet they respond differently to environmental conditions such as heat and humidity. Each time there is a change in seasons we rotate strains of mushrooms. Here at Santa Cruz Mushrooms that happens twice each year. 

In early February I'll start getting the warm-weather strains ready. It will take a month or so before they are ready to start fruiting, so getting the timing right is important. The mushrooms in the attached image are called "Pioppino” (Agrocybe aegerita). I did some initial tests with a new strain, and I'm really happy with the results. We have a limited supply right now, but will be growing a lot more in the future. 

  
We’re also adding a new oyster variety to the mix called “Italian Oyster,” also known as Phoenix Oyster. They are beautiful and quite delicious! I'm also developing a new strain of my own. This is a mushroom that I collected myself last year in Aptos that I am going to call "Freedom Oyster." I'll let you know when I have some mushrooms to show you.
